Chicken It's easy to prepare, budget-friendly and great-tasting, so we've put together a small collection of our highest rated chicken recipes. All you have to ask now is, who feels like chicken tonight?

Chicken Cordon Bleu (serves 4)

  • 4 skinless, boneless chicken breast halves
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 6 slices Swiss cheese
  • 4 slices cooked ham
  • 1/2 cup seasoned bread crumbs

 

 

 

Method

  • Preheat oven to 350°F (175°C). Coat a 7x11 inch baking dish with non-stick spray. Pound chicken breasts to 1/4 thickness.
  •  

  • Sprinkle salt and papper on both sides of chicken. Place a slice each of cheese and ham on top of each breast and secure with a tooth pick. Place in baking dish and sprinkle chicken evenly with bread crumbs.
  •  

  • Bake for 30-35 minutes or until chicken is no longer pink. Remove from oven and place 1/2 slice of cheese on top of each breast. Return to oven for 3-5 minutes or until cheese has melted. Remove tooth picks and serve immediately.

 


 

Chicken Patties/Burgers (serves 4)

  • 350 grams chicken mince
  • 1/4 teaspoon green tobasco sauce
  • 1 tablespoon corn flake crumbs
  • 1 tablespoon organic plain flour
  • 1 tablespoon olive oil and mayonnaise
  • 2 tablespoons pine nuts, toasted
  • 1 sliced Lebanese cucumber,1 grated carrot, 2 tablespoons finely chopped spring onions (shallots) and some snow pea sprouts.
  • 4 halved hamburger buns, toasted (optional)

 

Method

  • In a large bowl mix the mince, pine nuts, spring onions, mayonnaise, crumbs, flour and tobasco sauce until combined together. Shape into 4 flattened patties - lightly crumb.
  •  

  • Heat oil in large frying pan over medium heat, cook for 4 to 5 minutes on each side.
  •  

  • Top with cucumber, carrot and snow pea sprouts and drizzle with extra mayonnaise. Patties can be placed between bun halves if burgers are desired.
